They succeed Yves CATUSSE, owner of the hotel for 45 years, who has been able to pass down his know-how to Loïc, since his arrival in 2013. And it was in 2019 that his wife, Océane, with a hotel training, joined him to perpetuate the story of this address. This restaurant is mentioned in many guides (Routard, Michelin). The legend of « La Route d'Argent »...

The Rouergue, a land of trade and travel, opened up to the outside, mainly via the Toulouse-Lyon axis, crossing the Massif-Central diagonally.

All the wealth transited there: iron, copper, wine, knives, leather, cattle... as well as Silver, through the coins minted in our province. Following its prohibition by the royal authority towards the end of the 12th century, we will even see this Silver brought to Geneva by contraband to be remelted.

Everyone can see in this story of the great road, the origin of « La Route d’Argent ».
